Merche´s Diary - presented by Montecillo

We are now going to try one of our barrels that contains tempranillo from the 2015 harvest.

Let´s see how the wine is aging, how the wood is contributing, and determine if it is indeed adding all the good things that we need.

In some occasions the wine can be so potent that its too strong for the barrel, so then we`ll need a different type of wood.

Sometimes the wood is too strong and toasted and in this case the wine would become too tannic.

Therefore, it is important to revise regularly all our barrels.

In this case this barrel that were going to try, is made from French oak.

It was roasted a bit more than average, and the wine that we are going to try now is a wine with an impressive amount of colour, a high robe.

One thing you can do to know if the wine has a high robe is putting your fingers under the cup and look if you can see them.

In this case I can´t see my fingers, so we can say that it has a high robe of colour.

The light in this room is not the most adequate for wine tasting, but now we are not interested in the colour but aromatic contribution of the wood to the wine.

The wood is already well integrated but is not quite ready jet.

the wine is so powerful that it is still too strong for the barrel.

It will need more time, but the aroma and the profile that this barrel gives to the wine is exceptional.
